IKEA launches a seafood substitute range SJÖRAPPORT
IKEA has released a plant-based caviar substitute in its European outlets. The SJÖRAPPORT is derived from algae harvested from the Scandanavian seabed and formed into ‘beads’, a technique popularised by pioneers of the molecular gastronomy movement such as Michelin star chef Ferran Adrià of El Bulli’s fame.
IKEA’s press release notes that the cold Scandinavian waters have always been a source of nutritious and tasty fish and seafood for many generations.
"Fish and seafood are certainly an important part of the Scandinavian identity," says Annika Dunnico who helped develop the seafood series.
IKEA notes that their seafood substitutes are an effort towards “protecting our oceans and marine life for future generations”.
